Introduction to the 2007 Burgundy Vintage
Fine, Late Weather Saves the Vintage, After Tricky Summer
The 2007 growing season in Burgundy’s vineyards got off to an excellent start. Sunshine and high temperatures in April 2007 encouraged rapid growth. May continued warm and dry, allowing the flowering of the vines to take place early, around 20th May. This is always beneficial to quality, as it allows for an early vintage, and for growers to wait for optimal moments to harvest, without running undue risks from deteriorating, autumn weather.
June, July and August then proved to be cooler and wetter than normal, with sunshine often missing. I will not dwell on the summer weather, as it caused much concern, and vigilance was needed in the vineyards, to prevent powdery and downy mildew damaging vines or fruit.
PROGRESS IN VITICULTURE AT THE HOSPICES DE BEAUNE
22 differerent growers (vignerons) cultivate about 2.5 hectares each of the Hospices de Beaune Domaine, each being responsible for one, or more, Cuvées. Over recent years, under the instructions of Manager (Régisseur) Roland Masse, the growers have been moving progressively towards organic viticulture. Natural, instead of synthesized, products are adopted (sulphur and copper sulphate sprays) to fight mildew. Weedkillers are being replaced by ploughing, and anti-rot treatments reduced, or eliminated. It takes time for the vineyards to adapt to these new cultivation methods, and to build up their own defences, but excellent results are now being seen, to accompany the environmental benefits.
As we witnessed in previous years, a careful watch was kept on yields, which were controlled in 2007 by combinations of pruning, de-budding, shoot-thinning, green-harvesting and the elimination of less-than-perfect fruit.
VINEYARD-SORTING OF GRAPES IN 2007, FOR ALL CUVEES
At the end of August, two things became obvious. Fine, dry weather during the harvest was going to be essential, if a good quality vintage was to be made. And the most scrupulous grape-sorting operation, in both vineyard and vat-house, would be essential. This was to eliminate any less-than-fully-ripe grapes, or those affected by grey rot. The vignerons responded magnificently, as did the sorting teams at the vat-house (three teams, sometimes working till after 11 pm). Growers formed flexible teams of pickers, so that Roland Masse could orchestrate the harvesting, from hillside to hillside, exactly as the need arose. Mercifully, the days stayed fine, with a brisk, north wind drying the vineyards, concentrating grape-sugars and flavours. The Hospices de Beaune harvest took place 1-10 September. I witnessed the first week of picking, which took place in ideal conditions.
C’EST L’ANNEE DES PINOTS FINS
As I watched the grapes come in, and the sorting, it was evident that the ripest, most healthy grapes were those coming from small-bunched, low-yielding Pinots, known as « Pinots fins ». There is an enormous variety of plant material in Burgundy’s vineyards, some high-yielding, some prone to disease. These latter types were unable to withstand the challenging summer weather. So their produce was systematically clipped off, and left between the rows of vines, or removed from the sorting tables. "We have only kept the best" said Roland Masse, "just healthy grapes, with thick skins, and a level of maturity which is totally correct. C’est l’année des Pinots fins (It’s the year when fine Pinots really made their mark)."
THE CHARACTER OF THE VINTAGE
As I write these lines, the wines are in full fermentation. It is certain we shall see a wider variety of style and quality in the Hospices de Beaune wines, than in 2005, for instance. Some whites, picked relatively early, show concentrated fruit, minerality and freshness. Those picked 10 days later had gained in sugar, yet were still vivacious. From the reds, we cannot expect the ripely tannic, mid-palate structures of a hot-summer vintage. But many wines are deliciously fruity (juice, and vat tastings allow me to affirm this). The red grapes which went into the vats were healthy, with more whole berries, so it was possible to do more punching-down (pigeage) this year, than in 2006. Some little-known cuvées are unexpectedly successful. Other, classic names have real fruitiness, being dense on the middle palate, with soft, agreable tannins.
REDUCED QUANTITIES
In 2007, the Domaine des Hospices de Beaune is offering a smaller amount of wine for sale : 607 barrels, compared to 680 last year. This is for two, principal reasons. Firstly, the stringent sorting, secondly because a further, rigorous sifting of vineyard plots has taken place, the object being maximisation of quality. Only the produce of the finest, most aromatic vine-stocks, and those which give the most dense fruitiness, has been retained, for each Cuvée. Three Cuvées of Savigny-lès-Beaune 1er Cru have been improved in this way, as have several others.
ONE NEW CUVEE WILL BE OFFERED, AND SIX IN "ONE-YEAR" BARRELS
Alongside the classic, well-loved Dr Peste offerings, 7 barrels will be offered of one new wine : Corton-Clos du Roy Cuvée Baronne du Baÿ. It will clearly express one of the Corton hillside’s most individual, famous, long-lived Grand Cru terroirs. In total, there will be 30 Cuvées of red wine, with 12 white. As last year, not everything will be aged in new oak barrels. 6 Cuvées will be put into barrels which have held wines from the Domaine des Hospices de Beaune for one year, from the 2006 vintage. These are the Cuvées which have been selected to start their fermentation or ageing in "one-year" barrels : Pouilly-Fuissé Cuvée Françoise Poisard, Pernand-Vergelesses 1er Cru Cuvée Rameau-Lamarosse, Monthelie 1er Cru Cuvée Lebelin, Beaune 1er Cru Cuvée Bétault, Beaune-Grèves 1er Cru Cuvée Floquet, Pommard Cuvée Suzanne Chaudron.

RED WINES
Beaune 1er Cru Cuvée Dames Hospitalières
Red-purple of medium depth, the nose being intensely Pinot Noir, and cleanly fruity. This is a medium-bodied, supple, well-balanced wine, without seeming to have the vinosity of the best Beaunes, when tasted on 15 October

Volnay-Santenots 1er Cru Cuvée Gauvain
Rich purple-garnet in colour, with very pretty, crushed strawberry aromas, and fine spiciness from new oak. This is a rich, soft, beautifully balanced wine, with finely textured soft tannins on the finish. Envisage buying this for relatively early enjoyment 2010-2015.

Pommard 1er Cru Cuvée Dames de la Charité
Impressive, purple-ruby colour, with clean, fresh, black fruit aromas, powerful and open. On the palate, this is classically structured, with rich, vivacious fruit in mid-palate and silky tannins on the finish. The most elegant Pommard of the four in the Hospices range, this shows the best potential for mid- and long term aging.

Beaune 1er Cru Cuvée Guigone de Salins
Red-purple of medium depth, the nose being fine, ripe, rich and opulent. This is a richly structured wine with plenty of stuffing in mid-palate, and racy, elegant, fine aftertaste. undoubtedly one of the top Beaunes in 2007.

Clos de la Roche Grand Cru Cuvée Cyrot-Chaudron
Rich, deep colour. Beautiful nose, showing some whole bunch fermentation character, very perfumed, fine and fresh. Palate is richly built, fleshy and creamily textured, with elegant, long aftertaste. Tannins are soft and silky; this will be sumptuously delicious.

Corton Grand Cru Cuvée Charlotte Dumay
Rich purple-garnet, the nose being ripe, fresh and complex, recalling black fruits, with spiciness. This has structure and dense fruitiness, with elegant, harmonious middle palate, and supple tannins on the finish. Creamily textured, with superb fruit intensity and length of flavour, this is a classically great Corton, Grand Cru - for drinking 2012-2020 and beyond.

Volnay 1er Cru Cuvée Blondeau
Colour here is rich, purple-red, the nose recalling ripe plums, with lovely perfume and touch of toastiness. The palate is most impressive, showing dense fruitiness, with classic structure, vinosity, concentration and length. Tannins are present, but oh-so-soft. A lovely wine. Origins of this Cuvée are largely Taillepieds and Champans, along with Mitans and Ronceret - many of Volnay’s greatest First Growths.

Corton-Clos du Roi Grand Cru Cuvée Baronne du Baÿ
For the first time, a cuvée has been made exclusively from Corton-Clos du Roi (from vines which previously went into Dr Peste (mainly) and Charlotte Dumay.
Rich purple of medium depth, with the nose in October still smelling freshly and pungently of pressed grape skins, also liquorice and violets. This is intensely fruity, combining fresh, concentrated fruitiness with a gamey, earthy character which is individual, harmonious and long. My first taste of an iconic new Corton is uplifting - this has superb potential.

Meursault-Genevrières Cuvée Philippe le Bon
Picked on 11th September, this had gained one degree of alcohol in a week, while retaining exactly the same level of balancing acidity. The nose is open, lemony and intense, the palate rich and fine, with superb concentration and length. Small quantity available, but a very beautiful wine.

Corton-Charlemagne Grand Cru Cuvée François de Salins
Over 80 per cent of the vines in this plot – which is part of the historic Le Charlemagne sector of the Grand Cru – are more than 25 years old. Aromas are full, fresh, open and complex. On the palate, this is rich, with superb, creamy, mouth-filling middle palate, fine freshness and lovely length,. An outstanding wine.

Meursault-Charmes Cuvée Albert Grivault
These vines are superbly placed within Meursault-Charmes, lying just downhill from the Meursault-Perrières, Clos de la Perrière. The 2007 wine has spice and freshness on the nose. On the palate, it is full and round, showing richness with minerality. Tasted before the sugars had finished, so hard to assess.

Bâtard-Montrachet Cuvée Dames de Flandres
This was made from tiny grape berries, which have given a small quantity of exceptionally intense juice. Aromas are spectacular, showing citrus and peach. The wine is full-bodied and rich, with broad, mouth-coating middle-palate, superb potential complexity, fine acidity and lovely length.

Corton-Vergennes Grand Cru Cuvée Paul Chanson
Located only two hundred metres downhill from Corton-Charlemagne Cuvée Charlotte Dumay, this wine has a totally different flavour profile, being opulent and spectacularly rich. The nose is lively, the palate showing outstanding fruit intensity, with purity. It appears to have perfect balance on the palate, with length and complexity. Picked right at the end of the Hospices vintage, just like the other Hospices Grands Crus (the two Corton-Charlemagnes, the Bâtard-Montrachet), all these wines benefited from the extra days of fine dry weather, to concentrate their sugars and flavours.

Meursault-Charmes Cuvée de Bahèzre de Lanlay
Clean, fresh and attractive on the nose, with very pure, elegant fruit, crisp acidity, balance and length. Picked at the end of the harvest, well-ripened.

Corton-Charlemagne Grand Cru Cuvée Charlotte Dumay (blanc)
Facing due east, high on the hill. This is very fresh, showing citrus, with complex minerality. The palate has good fruit intensity, fine balance, and great purity on the finish, which is balanced and firm.
Christie’s estimate € 5,000 – 7,000 (surely a catalogue misprint). In 2006, this WHITE Corton-Charlemagne Cuvée Charlotte Dumay sold for €17,000 and €18,000 per barrel.

Meursault-Genevrières Cuvée Baudot
The nose is complex and spicy, the palate being rich, with impressive minerality, lovely freshness and a creamy texture. This is a densely concentrated wine, with admirably fresh, long aftertaste.

Meursault Cuvée Goureau
Cleanly fruity, ripe and opulent aromas have been evident in this wine, from the first moments after the grapes were pressed. The palate is beautifully balanced, with sumptuous fruit intensity, fine acidity, and honeyed richness on the finish. This will be a delicious, complex bottle of Meursault, for drinking from 2009 onwards, to 2012 and beyond.

RED WINES
Beaune 1er Cru Cuvée Nicolas Rolin
Rich, purple-ruby, the nose showing very fragrant, Pinot Noir character, with both black and red fruit character. This is leaner and more concentrated than Beaune Cuvée Guigone de Salins. Together, they are two of the greatest Beaunes of the year, at the Hospices. Nicolas Rolin is made from a high proportion of really fine Pinot plants, with small bunches and tiny berries. This is a concentrated wine of great beauty, with fine tannins and superb potential. (One barrel of this will be the Pièce du Président in 2007, sold for other, specified charities).

Corton Grand Cru Cuvée Dr. Peste
Deep, purple-red in colour, with exuberant, fragrant, eau-de-vie de Kirsch aromas, pungent and complex. This a beautifully structured, rich wine, of exceptional fruit concentration, well-ripened, gentle tannins and impressive length. Mouth-coating, showing great potential. Corton Dr. Peste vineyards face mainly South, catching maximum sunshine. Added concentration has been brought to this wine in 2007 – as was the case in 2006 – by eliminating some grapes from the low-lying Fiètre plot of Corton, which in the past was included. This is one of the greatest Cuvées in the cellar in 2007, and will certainly age magnificently.

Savigny-lès-Beaune 1er Cru Cuvée Forneret
Purple-red of medium depth, with open, freshly aromatic nose. On the palate this has pure fruitiness, flesh and fine tannins. It is a lovely Savigny for early to mid-term drinking.

Clos de la Roche Grand Cru Cuvée Georges Kritter
There are two Cuvée names for one identical Clos de la Roche wine. There are just 3 barrels of Cyrot-Chaudron, and 3 of Georges Kritter, in 2007. They were made in one vat, then given the names of two different, generous recent benefactors, who each donated funds to buy the vineyards.
Tasting note, same as Cuvée Cyrot-Chaudron : Rich, deep colour. Beautiful nose, showing some whole bunch fermentation character, very perfumed, fine and fresh. Palate is richly built, fleshy and creamily textured, with elegant, long aftertaste. Tannins are soft and silky; this will be sumptuously delicious.

Beaune 1er Cru Cuvée Brunet
Rich purple-ruby in colour, with nose showing bright, fresh grapeyness and fine, Pinot Noir character. First palate impression is of plump, sweet fruitiness, well-sustained through the middle palate. Soft tannins and agreeable acidity give this wine balance, the finish being charming, supple and long. One of the best Beaunes of the vintage, for early and mid-term drinking.

Pommard Cuvée Raymond Cyrot
Purple-red of medium depth, with clean, roasted fruit aromas. This is a richly built wine, with real stuffing in middle palate, and beautiful fruit. The wine has finesse and harmony, with very fine tannins. A great success in 2007.

Beaune 1er Cru Cuvée Clos des Avaux
Garnet-purple of medium depth, with characterful, Pinot Noir and undergrowth aromas. The palate has good structure, with mouth-coating fruit, and rich tannins. This is never one of the most elegant Beaunes in the cellar, but it has generous character and ages excellently.

Meursault-Porusots 1er Cru Cuvée Jéhan Humblot
This 2007 has well-ripened, lively aromas, the palate being medium bodied, harmonious, very fresh and delightfully long. This is not a powerful Meursault, but it has freshness, fruit intensity and harmony, for early and mid-term drinking.

Pouilly-Fuissé Cuvée Françoise Poisard
The nose is open, fresh and clean, the palate being vibrant with lively, harmonious, Chardonnay fruitiness. This wine is fermenting in “one year” barrels, allowing the stony minerality of Pouilly-Fuissé its full expression.

RED WINES
Beaune 1er Cru Cuvée Maurice Drouhin
Red-purple of medium depth, with vivacious, cherry fruitiness on the nose. Starts well, dips a little in the middle, then finishes fine and clean. This wine has energy and character. Gentle lees-stirring during the early months of tending, by an experienced, specialist négociant-éleveur, can add flesh to the middle palate.

Auxey-Duresses 1er Cru Les Duresses Cuvée Boillot
These grapes were allowed to hang exceptionally long in 2007. I walked through the vineyard on Wednesday 5th September, looking at a well-controlled yield of fine Pinot grapes, on a gently sloping site, perfectly located on the village’s best hillside. The bunches were picked right at the end of the vintage, giving an exceptional, natural 13° degrees.
The wine is deep, purple-red, with characterful, richly fruity aromas. This is medium-structured, with concentrated fruitiness, and dense, mouth-coating tannins. A wine to buy for 2-3 years bottle-ageing, not for immediate drinking.

Savigny-lès-Beaune 1er Cru Cuvée Fouquerand

Pommard Cuvée Suzanne Chaudron
Medium-deep red-purple, the nose showing lovely, well-ripened clear frutiness. The medium body and delicate fleshiness of this wine encouraged Roland Masse to run it off into “one-year” barrels. Tasted in mid-October, its prettily textured, fleshy middle palate was most beguiling, the tannins soft and gently-mouth-coating. There are fifteen barrels, in two parcels.

Beaune 1er Cru Cuvée Rousseau-Deslandes
This was the last Beaune cuvée to be picked. The grapes had been looking good through all the first week of harvest, and the extra hang-time brought flavour concentration, with added sugars. The bunches were brought in with a natural, potential degree of 13°4. Colour is medium purple-garnet, aromas being elegant, fresh and fine. On the palate, supple, rich, round and velvety, with harmonious aftertaste.

Monthelie 1er Cru Les Duresses Cuvée Lebelin
Colour is ruby-purple of medium depth, the nose showing fresh, bright Pinot Noir character. On the palate, this has stuffing, with agreeable, grapey character, a well-balanced, charming wine. This is aging, very appropriately, in “one year” barrels,.

Beaune 1er Cru Cuvée Cyrot-Chaudron
Good, purple-red, with clean, ripe, grape-skin aromas, recalling its recent pressing. This has round fruitiness, with stuffing on the middle palate and attractive finish. Ageing in new oak, all elements look set to come together well.

Pernand-Vergelesses 1er Cru Cuvée Rameau-Lamarosse
Red-purple of medium depth, with fine, clean Pinot Noir aromas. Palate has open, agreable, light fruitiness. This was picked right at the end of the harvest (10/11th Septrember), to maximize fruit concentration and natural sugars. As last year, it is aging in “one year” barrels and surely will make very attractive, youthful drinking.
