Established and planted in 1995 by Gary and Julie Hounsell, the estate’s name originates from its close proximity to the Toolangi State Forest. The 13-hectare vineyard is located in Dixon’s Creek, about an hour north east of Melbourne. Situated on a north-easterly facing site on gentle slopes that have well-drained clay soils with shale and stony topsoil. The varieties planted are Chardonnay and Pinot Noir, the stars of the region, with plantings of Shiraz and Viognier. In the vineyard, yields are kept low to intensify fruit flavour and structure incorporating practices such as green harvesting. All fruit is estate grown although some wines may occasionally be supplemented with fruit from premium sites throughout the Yarra Valley. Pepper Tree was established in 1991 in the Hunter Valley. The estate produces fruit from its own extensive vineyard holdings in the Hunter, Orange, Coonawarra and Wrattonbully regions. Amongst its offerings, Peppertree produces a number of single vineyard wines. Their Hunter Valley vineyard, planted primarily to Chardonnay is located in the Mount View area of the Lower Hunter Valley in the sheltered foothills of the Brokenback Range. Peppertree’s vineyards in Orange are anchored mid-slope on Mt Canobolas and are also planted primarily to Chardonnay. The estate sources its Cabernet Sauvignon from their Coonawarra and Wrattonbully vineyards. Each wine in the Pepper Tree Single Vineyard range is made to express the best of the variety and the region.
