From Colognola ai Colli in the Soave district, this is made from 90% Garganega, with 5% each of Trebbiano di Soave and Chardonnay. Hand-picked fruit is fermented at 18 degrees after a 10-12 hours skin contact to promote aromatic intensity to build a little phenolic texture. This is a vibrant, aromatic wine with preserved lemon notes, along with almond and passionfruit notes. Mouthfilling and flavoursome, it finishes with refreshing, succulent acidity. A great match with risotto, light pasta and all white meat, fish and shellfish dishes.
