The profound Jack Mann Cabernet, based on the Justin Vineyard in the Great Southern region, is made in honour of pioneering Western Australian winemaker Jack Mann. The wine completely evokes the scent of place with crushed blackcurrant/dark cherry/ mulberry/ herb garden aromas, beautiful concentration, muscular but round granular perfectly ripe tannins and tremendous drive of flavours. Vinification takes place at Houghton's rambling winery in the Swan valley. The wine is fermented in small vats before maturation in new and one-year old French oak barriques for 14 to 18 months.

Region Great Southern

Great Southern, is Western Australia’s coolest wine-growing region. The first experimental vineyard was planted in the late 1960s at Forest Hill. Successful trials encouraged Tony Smith of Plantagenet Wines to plant the first commercial vineyard of Cabernet Sauvignon and Shiraz in 1968. The climate across this vast region is incredibly varied with the south more maritime influenced becoming more continental further inland. As a result, there is notable variationof temperatures in the growing season particularly around Mount Barker and Franceankland River. Inland vineyards are generally located on higher elevations above the salty water table. The soil types are derived Franceom granitic and gneissic rock, mostly laterite gravelly loams or sandy loams. Great Southern is best known for classically structured Cabernet Sauvignon and peppery Shiraz, whilst Riesling thrives in the sub-regions of Franceankland River and Mount Barker.

Winery HOUGHTON

Established in 1836, Houghton is a large Western Australian wine company based in the Swan Valley with extensive vineyard holdings in WA. The pioneering Jack Mann began his apprenticeship in 1922 and became the driving force behind the company for an astounding 51 consecutive vintages. After a series of corporate take-overs and acquisitions, Houghton is now part of the huge Accolade Wines group. The brand is is best known for its popular Houghton White Burgundy (now called Houghton White Classic) and its flagship premium wine the Jack Mann Cabernet blend.
