The fruit is cold soaked for ten days prior to fermentation. Twice daily pump-overs and three rack-returns during ferment. Three to four weeks on skins develops tannin and balance. Fifteen months in 50% new French oak barriques (predominately Bossuet and D’Aquitaine).

French oak has proved its affinity with cabernet time and again, but puts an exclamation mark here."

"Medium to deep red colour with a tinge of purple, the bouquet red-fruited and gently herbal. The palate has a sweet, almost jammy centre surrounded by thick, chewy tannins. It needs food or/and age, and seems unbalanced today, with exaggerated tannins. There is good sound cabernet flavour deep within this wine. It just needs a bit of time. Good potential."

Blackcurrant and truffle, bay leaves and violets, malt. It’s a sturdy, characterful red with a dusty dryness pulling on the finish. I’m not 100% convinced that it’s all 100% in balance but I am convinced that it’s a quality wine.
