Vintage Collection Dosage Zero: a majority Chardonnay, with close to equal parts Pinot Nero and Pinot Bianco, this formidably powerful and complex fizz is fermented in small barrels where it remains for five-months. It is then racked by gravity to tank. Here it settles. Following blending, the wine undergoes a second fermentation in bottle before spending in excess of four-years on lees. The grapes are selected across Ca’ del Bosco’s signature ‘berry spa’ technique (three soaking vats and a drying tunnel, to ensure the most immaculate fruit). For this wine they hail from sites with the greatest proclivity for ripeness. Subsequently the acidity is softer, more supple and juicy. There is no need to add dosage. Think nashi pear, Granny Smith, orange blossom and a thrill ride of pungent mineral meshed to high altitude acidity. Palate-staining, dry and long.
