Fruit from a 25-year-old plot in the Yarra Valley’s Coldstream sub-region was fermented as whole bunches in the Beaujolais style, then pressed to old oak puncheons for 3-4 months maturation on lees before bottling without fining or filtration. Juicy and vivacious.
