PAXTON Cracker Barrels Shiraz Cabernet Sauvignon, McLaren Vale
This is the final wine made each year at Paxton. There is always at least one barrel (and up to four) that really stand out, and these barrels are kept aside. In 2016 there were four ‘Cracker Barrels’ -- in just the right combination to make this excellent, biodynamically-grown Shiraz Cabernet Sauvignon blend.
Not one of the French oak barrels was new. The final wine has great intensity and depth of flavour supported by subtle oak. It is full bodied, with vibrant Cabernet Sauvignon giving way to juicy Shiraz on the mid-palate. Tannins are fine and ripe and all the wine’s elements combine in a bold and energetic finish. Drink or keep long-term.
A 52/48% blend of four barrels. The colour is excellent, and the wine brings it all to the table: black and purple fruits, dark chocolate, peppermint, warm spices, French oak and ripe tannins. It does all this within the overall context of a juicy, medium-bodied wine that has excellent balance. Its life span will very likely exceed your patience.

Deep purple/red hue, with a sweetly floral, peppery, spicy aroma, bright and fresh and lifted. The wine is medium to full-bodied and elegantly-structured, with grip and style.
