Canon is St-Émilion's great limestone-plateau estate — a property of historic importance that has been restored to the very top tier of the appellation under the ownership of Chanel. The merlot-dominant blend from chalk-rich soils produces a wine of elegant structure and real complexity, quite different in character from the clay-based richness of Pomerol. It is one of the appellation's most improved and exciting estates, and increasingly recognised as a wine of genuine first-rank ambition.
