Grown organically at 400 metres, the vines thrive on mineral-rich granitic loams over gravel and clay. Handpicked in cool mornings, the grapes are gently pressed and fermented in French oak barrels, 30% new, ageing for 20 months in an underground granite cave with stable humidity and temperature. Intuition in winemaking and a deep connection to nature secure this Chardonnay's esteemed place in Australian winemaking.
