With fruit derived from 50 to 110-year-old vineyards in the McLaren Vale, the highly concentrated, tannin‑ripe Hardys Eileen Hardy Shiraz is open fermented and basket pressed before maturation in new (25%–33%) and seasoned French oak for 16 to 20 months. Hallmarks of this wine include brambly ripe fruits alongside baking spice, clove and white pepper, with an underlying smokiness. An opulent expression built on finely wrought, silky tannins and assiduously used oak.
