Arnaud Mortet manages a tiny parcel of old Pinot Noir vines in the northern sector of Charmes-Chambertin, directly adjacent to Griotte-Chambertin. The site features shallow, chalk-rich red soils strewn with limestone pebbles, providing a natural foundation of drive and minerality.
Winemaking here favours restraint and precision. Mortet employs partial whole-cluster fermentation with indigenous yeasts to build structural poise and aromatics. The wine matures in fine French oak barrels, yielding seamless integration while keeping the vineyard at the forefront.
The nose routinely delivers lifted aromas of red cherry, raspberry, violet and white pepper. On the palate, expect a supple, cashmere texture layered with dark berry fruit, fine-grained tannins and a persistent, saline finish.
