Ed Carr seeks inspiration from Champagne’s greatest houses, employing long lees ageing, ambitious disgorgement dates, a dabble with oak and judicious levels of dosage. These are, unequivocally, the finest expressions of sparkling wine in Australia. Possibly the New World. This, the top of totem. Well in excess of10 years en tirage has embellished this luxuriant fizz with riffs on peat, truffle, hazelnut, sea spray and glazed quince. Pop this next to a Prestige Cuvée and swoon!

A complex nose of yeast extract, iodine, ginger candy, praline and roasted hazelnuts wafting across a Tokyo subway entrance. Full and palate-staining with so much extract as to almost bury the slither of saline freshness carrying the length. Good length, mind you, that one has to feel out amidst the melee. Very good fizz. Drink or hold.

The much awaited 2008 E.J. Carr Late Disgorged is a blend of 64.4/35.6% chardonnay/pinot noir sourced from premium vineyards across Tasmania. Aged on lees in tirage for 13 years with a 2.2 g/L dosage. Disgorged December 2022. Mid-straw in the glass with an ultra-fine bead and aromas of green apple, juicy nectarine and white peach with hints of crushed oyster shell, white flowers, grapefruit pith, sea spray, shiitake broth and straight out of the oven brioche. Coils then expands on the palate, all tension and release as the minerally acidity propels the wine across the tongue. Pristine flavours of stone fruits, soft spice, clotted cream and biscuity/toasty tones abound, finishing bright and intensely focused with real intent of flavour and line. A benchmark Australian sparkling wine.

Disgorged in December 2022. “08 was just a brilliant year”, states Ed Carr, “cool early on, the fruit ripened really nicely, the late rain really kicked the vines along, quite a fruitful year, an elegant year was the result”.
Potent and rich, complex and layered. Scents of preserved lemon, ginger, chicken stock, sea spray, sourdough bread, toast and cinnamon. Flavours similar, so intense and yet compact, a distinct elegance and seamless flow, silkiness to texture too, a vinous expression but wildly complex and savoury to boot. The power builds and builds. Bubbles tight, racy, a restraint from saline/minerally acidity and yet the mature wine characters stand up too. So serious, so good, a wildly good sparkling wine.
