Bibi Graetz produces Testamatta from old-vine Sangiovese sourced from high-altitude parcels across Tuscany. The fruit originates from sites in Fiesole, Lamole, and Siena, where vines ranging in age from 35 to 80 years grow in rocky galestro soils. This wine represents a commitment to capturing the essence of the region through mature vineyards. The name reflects the estate's creative, uncompromising approach.

The winemaking process relies on manual techniques. Fermentation occurs in open-top barrels using indigenous yeasts, with frequent punch-downs to manage extraction. The wine matures for twenty months in neutral French oak barriques and larger casks. Graetz avoids new oak to ensure the fruit remains the primary focus. This method results in a transparent wine that emphasises varietal purity and structural elegance.

The nose offers scents of wild strawberry, violet and orange peel. On the palate, the wine is vibrant and medium-bodied, featuring flavours of red cherry, tea leaf and iron.
