Bollinger’s La Côte aux Enfants Champagne represents a rare, single-plot exploration of the house's spiritual home in Aÿ. This 100% Pinot Noir cuvée is sourced exclusively from the north-west-facing slope of the legendary four-hectare lieu-dit, a steep chalky hillside patiently reassembled by Jacques Bollinger from over fifty different owners in the early 20th century. While the south-facing side of this vineyard has long produced Bollinger’s famous still red wine, this Champagne expression focuses on the "hidden" side of the hill to deliver a finer, more tensile profile.

The winemaking follows Bollinger’s rigorous traditional methods, featuring 100% barrel fermentation in small oak casks to encourage complexity and texture. The wine is aged in the house's deep chalk cellars under natural cork for significantly longer than required by law—often twice the standard period—to allow for a slow, controlled evolution.
