This larger format reduces the impact of wood while allowing the wine to develop complexity through extended contact with the yeast lees. There is no malolactic fermentation, which keeps the profile crisp and defined.

The red wines are open fermented, plunged and basket pressed and are not filtered to ensure the wonderful site and varietal characters are nurtured and protected.
