Francois Mitjavile manages this small, south-facing amphitheatre vineyard, where the Merlot and Cabernet Franc vines sit on clay and limestone soils. In the cellar, Mitjavile employs traditional vinification before maturing the wine in 100% new French oak barrels for up to two years. This extensive oak regime is a signature of the estate, yet the fruit possesses the sheer density required to absorb it. The winemaking team focuses on extracting plush tannins and maintaining a seamless integration of wood and fruit.
