DEEP WOODS ESTATE Single Vineyard Chardonnay, Margaret River
Deep Woods Estate is one of the premier estates in Margaret River, established in 1987 and recognised globally for their exceptional wines. The Deep Woods Single Vineyard Chardonnay is produced in extremely limited quantities from a small, single vineyard in Karridale. Fruit is hand-picked and left overnight in a cool room. The following day the fruit is whole bunch pressed on a long, gentle cycle to avoid unwanted phenolics. The juice is then racked straight to 30% new oak hogshead and puncheons for wild fermentation. The wine did not undergo malolactic fermentation and bâttonage is only used when necessary to add depth and complexity.
