Domaine Bernard Defaix Cote de Lechet 1er cru Chablis
The Côte de Léchet is one of the best-situated Premier Cru sites on the left bank of the Serein. Steep, south-facing, and rich in fossilised limestone, it has been a cornerstone of Bernard Defaix’s production since the domaine was founded in 1959 and is now run by Bernard’s sons, Sylvain and Didier. The estate farms organically, with minimal intervention in both the vineyard and cellar. This wine is vinified in stainless steel and spends around 12 months on lees before bottling, with no oak influence, allowing the site to speak clearly. The result is a structured and mineral-driven Chablis, with citrus, wet stone and floral notes on the nose, and a taut, saline palate that gains texture and complexity with age. The wine is typically released after a year in bottle. This is a benchmark expression of a Premier Cru Chablis at a consistently strong price point and will reward cellaring comfortably in the mid-term.
