In the cellar, non-interventionist winemaking takes precedence. The fruit undergoes natural yeast fermentation in concrete vats before ageing in large, neutral oak foudres. Daumen avoids new oak entirely, preserving the untamed purity, structure, and terroir-driven depth of the old-vine Grenache.
