Jérôme Galeyrand is a passionate Burgundy winemaker who turned his back on a successful cheesemaking career to follow his dream. He bought his first vines in 2002 – a tiny 0.05ha plot – and has now expanded his holdings around Gevrey-Chambertin to over 5ha. His estate was certified biodynamic in 2015 and this wine comes from four parcels in the village of Chambolle grown on clay-limestone soils. The grapes were de-stemmed and macerated for 3-5 days before fermentation over 18-20 days. Gentle pressing and 16 months maturation in oak barrels completes a thoroughly gorgeous wine.
