Domaine Pattes Loup, led by Thomas Pico, has become one of the most distinctive names in Chablis. Pico works organically in the vineyard and takes an unhurried approach in the cellar, seeking precision through patience. The Premier Cru Butteaux vineyard is situated on the left bank of the Serein, a cooler site renowned for producing wines with exceptional ageing potential. Pico’s Mise Tardive is bottled later than his regular cuvées, spending extended time on fine lees in a mix of stainless steel, concrete eggs and older oak barrels. This slower élevage builds texture and complexity without masking the vineyard character. Each vintage, the wine exhibits aromas of citrus peel, orchard fruit, and gentle herbal notes, alongside a mineral depth derived from Chablis’ Kimmeridgian soils.
