Fourth-generation winemaker Fabien Coche sources fruit from 40-year-old vines across three limestone marl parcels located near the Pommard border. Following organic principles, Fabien focuses on low-intervention viticulture to preserve natural structural focus and varietal character. In the cellar, production techniques include whole-bunch inclusion and gentle vinification. The wine matures in large-format oak barrels with minimal new oak, and is bottled before the next harvest to retain freshness. This brings clear lineage and cellaring potential to fine wine collections.
