This Cabernet Sauvignon originates from a specific single vineyard site where ironstone and limestone provide the necessary drainage for concentrated fruit. The vineyard selection focuses on older vines that produce low yields, ensuring a wine of significant depth and regional character.
The winemaking process involves fermentation in open-top fermenters to manage tannin extraction. Following this, the wine matures for 18 months in a combination of new and seasoned French oak hogsheads. This maturation period allows the Cabernet's structural elements to integrate with the wood, resulting in a balanced profile.
