Lindemans St. George Vineyard Trio Cabernet, Coonawarra

The St. George Vineyard is a cornerstone of Coonawarra’s viticultural history, first planted in 1968. This site is defined by its classic terra rossa soil, a thin layer of red clay over a limestone base, which provides the natural drainage and mineral profile essential for high-quality Cabernet Sauvignon. As part of Lindeman’s "Trio" alongside Pyrus and Limestone Ridge, St. George represents the estate’s commitment to single-vineyard expression and regional prestige.

In the cellar, the fruit undergoes traditional fermentation followed by maturation in French oak hogsheads, with a portion being new wood. This process focuses on structural integrity and the slow integration of tannins. The winemaking team prioritises the vineyard's fruit profile, ensuring the wood acts as a frame rather than a mask, resulting in a wine built for long-term cellaring and steady development.
