Crafted by industry veteran Will Hoare, Novum represents a deliberate return to single-site purity in Marlborough. The Quarters Vineyard sits in the Southern Valleys, a sub-region prized for its dense clay soils rather than alluvial gravels. This dry-farmed site forces deep root penetration, yielding Pinot Noir with remarkable natural structure, drive, and concentration year after year.

Winemaking prioritises restraint and texture over raw power. Hand-harvested fruit undergoes wild fermentation with a portion of whole bunches, introducing floral lift and fine-grained tannin. The wine matures in French oak barrels, with a modest proportion of new oak, preserving the site's distinctive mineral character and bright natural acidity.

Every vintage delivers a classic Southern Valleys profile: vibrant dark cherry, red plum, and violet aromas backed by subtle forest floor complexity. On the palate, expect generous red berry fruit, silky tannins, and a long, savoury finish that outperforms its price point.
