Patrick Piuze Premier Cru Vaulorent, Chablis
Patrick Piuze has established a reputation for producing some of the most site-specific wines in Chablis. Vaulorent is the only Premier Cru situated on the same hill as the Grand Crus, separated from Les Preuses by a narrow path. This location provides a unique microclimate and Kimmeridgian limestone soils that yield fruit with Grand Cru intensity. Piuze focuses on sourcing from older vines to ensure depth and a clear reflection of the vineyard's heritage.
The winemaking remains hands-off to protect the purity of the fruit. Harvest is conducted by hand, followed by a long, gentle pressing. Fermentation occurs in old French oak barrels that are typically 6 to 8 years old. This ensures no oak flavour is imparted to the wine. The wine then rests on its lees to develop a rounder texture before bottling.
The nose offers aromas of white flowers, lemon curd, and crushed oyster shells. On the palate, the wine is concentrated and linear. Flavours of green apple and saline minerals lead into a long, chalky finish. It is a bottle that provides the weight of a Grand Cru with the vibrant acidity characteristic of the region.
