Neil Paulett established this estate in 1983, selecting the Polish Hill River sub-region for its unique geology. The vineyard sits on ancient slate soils that are over 650 million years old. These lean soils and the cool night air trapped by the surrounding hills ensure low yields and fruit with high natural acidity. This specific location is recognised for producing some of the most focused and age-worthy Rieslings in the Clare Valley.
The winemaking prioritises fruit purity through protective handling. Grapes are harvested during the night and pressed within an hour of picking to minimise oxidation. Only free-run juice is used, which is then fermented in temperature-controlled stainless-steel vats with neutral yeast. The wine is stabilised and bottled early to retain the primary characteristics of the site.
The nose offers scents of green lime, white flowers, and flint. On the palate, the wine is bone-dry and linear, featuring flavours of lime zest and Granny Smith apple. A distinct slate-like mineral texture runs through the core, leading to a crisp finish. This Riesling is built for immediate refreshment or long-term cellaring.
