Winemaker David Pehu ferments and matures the base wine in oak, allowing gentle oxygen exchange while retaining the site's clarity and drive. There is no malolactic conversion, preserving the wine's tension and freshness. Disgorged with a low dosage, it shows the full, savoury character of pinot noir from Mailly.
