Pierre-Yves Colin-Morey, Bourgogne Hautes Cotes de Beaune blanc

Pierre-Yves Colin-Morey (PYCM) is widely regarded as one of the most compelling producers in Burgundy today. Established in 2005, the domaine focuses on high-altitude sites and minimal intervention. This Hautes-Côtes de Beaune Blanc originates from vineyards situated above the famous escarpment, where cooler temperatures preserve the natural acidity and tension that have become the hallmarks of the PYCM style.

The winemaking reflects a commitment to purity. Pierre-Yves avoids battonage (lees stirring) and uses larger 350-litre French oak barrels, rather than the standard 228-litre casks, to reduce wood influence. The wine is bottled under wax seals to prevent premature oxidation, ensuring the fruit remains vibrant. This technical rigour results in a Chardonnay of immense structural integrity and value, punching well above its regional classification.

On the nose, expect lemon zest, white flowers, and a distinct flinty reduction. The palate is lean and driven, offering green apple and citrus flavours backed by a saline, mineral finish. It is a precise wine that rewards those who appreciate energy and transparency over weight.
