Riposte The Cutlass Adelaide Hills Shiraz
The fruit for this wine is sourced from Carmine and Marina Pepicelli’s vineyard near Lobethal in the Adelaide Hills. At 480 metres above sea level, this is one of the highest Shiraz vineyards in the region. It is located on a gentle north facing slope giving an ideal aspect with maximum sunlight exposure.
Tim Knappstein ferments in two separate batches to achieve complexity in the wine. The first batch sees 50% whole bunches while the second is fermented using whole berries. The product is two wines of differing styles. One showing an attractive carbonic confectionary note with a tannic structure derived in part from ripe stems. The other is round and soft and textural. Each wine is raised separately in 35% new French oak barriques. The final blend is a result of strict barrel selection.
