Riposte by Tim Knappstein The Katana Chardonnay from Adelaide Hills is a refined, cool-climate Chardonnay that showcases the region’s hallmark freshness and elegance. Fermentation takes place in French oak barriques, with 25% new oak and a portion of the juice fermented with wild yeasts, followed by malolactic fermentation and time on lees to build complexity. The wine displays notes of stone fruit, tropical fruit, vanilla icing, and beeswax, with supple texture and lingering finish, while subtle oak influence is present but well integrated.
