Sami-Odi's Hoffmann Dallwitz Shiraz is crafted from select parcels within the Hoffmann family's Dallwitz vineyard in the Barossa Valley. Some of the vines dating back to 1888 are cultivated using biodynamic practices on ironstone and red clay-loam soils.
Winemaker Fraser McKinley employs whole-cluster, carbonic fermentation with native yeasts in stainless steel, followed by ageing for approximately 19 months in 228-litre Burgundy pièces, incorporating about 25% new oak. The wine is bottled without fining or filtration to preserve its character.
Each vintage offers a bouquet of dark fruits, such as blackberries and plums, complemented by notes of dark chocolate and mocha. The palate is rich, with a balance of fruit intensity and fine tannins, leading to a long, intricate finish. This Shiraz reflects the unique terroir of the Barossa Valley and the meticulous care in its production.
