Savaterre Shiraz, Beechworth
Savaterre’s shiraz is savoury and spicy, yet supple and soft. A minimal intervention approach allows the wine to proudly model its regional identity, and articulately express its terroir. This compelling shiraz is often better described as syrah in style, with a strong Old World, Northern Rhone influence.
Savaterre’s winemaking is light touch, and more or less uniform across varieties. Wild yeasts, basket presses, and lees ageing are employed before the wines are matured for up to 18 months in specially imported French oak, followed by another 6 months in bottle prior to release.
Savaterre is the passion project of winemaker, and co-owner, Keppell Smith. The 40ha property—8ha planted to chardonnay, pinot noir, shiraz, and sagrantino—is organically farmed, with viticulture, and winemaking, inspired by Old World, Burgundian practices.

Soft, supple and with suprisingly wide gauge. It's a very savoury expression but feels comfortable with its lazy spread, the softness of texture (yet finishes chalky and pleasingly bitter-dry), dark fruit meshed with truffle. Aussie bush characters and old spice cupboard feel to seasoning. The more you sip, the more the grip builds. It's an intriguing, individual and compelling wine, more akin to old school pinot noir perhaps, maybe a gentle, mature Barolo but lighter and finer?! Anyways, it's a pleasure.
