Stella Bella Cabernet Sauvignon captures the character of southern Margaret River by blending fruit from five select vineyards. These vines grow on gravelly loam soils, where cooling maritime breezes moderate the ripening period. Chief winemaker Jarrad Olsen focuses on fragrance and structural refinement rather than heavy extraction. In the cellar, gentle handling and a cold soak lead to a warm fermentation, retaining whole berries to enhance the aromatic violet lift. The wine matures in small French oak barriques for twelve months, producing a medium bodied style with fine tannins and pristine varietal purity.
